The water used in brewing this beer is collected in Tonda along the Takase-gawa River and the Kumano region mountains. "Using this water allows wort to be extracted easily and the flavor of the finished product is pure," says brewery representative Kazuya Manabe. High-quality water is essential for craft beer, in which the unique qualities of the individual brewery stand out.

- Ozaki Shuzo
This sake brewery began brewing in the early days of the Meiji period. Brewing with the underground water from the Kumano-gawa River that flows under its windows, it maintains the sharp, plain flavor of its local sake. To do so, it uses a natural cooling method that brings in the north wind that blows across the surface of the river in winter. The brewery has products brewed using the miracle water of Nachi Waterfall that is said to promote longevity and healing. These products could only be made by a sake brewery located in this sacred place.

- Yoshimura Hideo Shoten
The sake here is brewed in a storehouse with thick, earthen walls that breathe, maintaining a comfortable temperature year-round. Underground water from the Kino-kawa River is used for brewing, based on the idea that "exquisitely flavored water creates a mild-flavored but crisp sake." In 2013 the brewery welcomed a new female head brewer from Noto, and it continues to pursue the creation of an excellent sake, for drinking with meals, that has the delicious flavor of rice raised by independent farms and exquisitely balanced acidity.

In Hashimoto City, there is a thriving dyeing industry that uses the abundant underground water of the Kino-kawa River, and the city is famous as a major production area for pile fabric. Taenaka Pile Fabrics carries out all the steps of production from dyeing to processing. Among its products are sheets used on Shinkansen and fabric for famous brands. "The soft, high-quality water of the Kino-kawa River is indispensable to our dyeing," says company president Taenaka.
